Its the arabic gum (sp?) in the mentos it forces the immediate release of the carbonated co2 in the soda...shaking it only releases part of the gas at a time, Seen them explode when you shake em? same thing but much bigger.

The only reason they use diet drinks is because they are not as sticky. Theoretically it should work with any normal soda... The way the average method of doing this trick, usually means someone gets soaked, so the less sticky the better.
