Seriously, I want to know how the hell you can detect methane, let alone the temperature of a planet 63 light years away, with the Hubble telescope?

Luncaster > one way of finding out that there`s methane in its atmosphere is if the planet is between the hubble and its star, and the light from the nearby star is shining through the atmosphere(like in the eclipse situation @ 1:45). As the light passes through the gas, certain wavelengths of light are absorbed so that if you were to shine that light through a prism, you`d see black gaps in the rainbow-color spectrum you`d usually get. Different substances have different characteristic wavelengths missing. If you want to know what`s in a mystery gas, shine light through it and see what wavelengths are missing, then compare to a reference. That`s the simplest way I know of, but there are probably a few other independent methods.
As for the temperature, it`s possible to derived it from its color (look up Blackbody radiation). This probably wasn`t the case here (not sure to what extent this planet would be considered as acting as a BB if it`s mostly gas), but I just wanted to give you an example of a way we can find these kinds of things out without having to actually be there with a thermometer in hand.
