What has in union these 4 words: "Hemmimng, Basting, Pearling, Tagging"?

Answer: A cooked goose.

You hem the insides, you baste the meat, pearlings are the pimples on a goose or duck, store bought birds used to have goverment approval tags.

But the riddler put these words not in chronological order as the quality tags are removed first.
