Is it possible to get back on it in open water (i don`t think so) it would be a huge disadvantage if you have to drag it back to shore. That being said, still pretty ingenious, i`d take two (since one would likely end up at the bottom of the lake the first day out)

No you can`t get back onto it from in the water. you have to take it back to shore, and it doesn`t exactly float.

This thing has little (=no) flotation.

So if a person can deliver the energy required for flying on water, then we should be able to in air as well, if only for high enough efficiency. The fundamental job of beating gravity is the same, just the medium is too thin to get an efficient grip on the air.
