Crocodiles have pretty poor vision, especially in the murky water they spend the majority of their lives in. To make up for this they have a keen sense of touch that helps them feel vibrations in the water and ultimately catch their prey. I bet the action of the guy pulling his had out rapidly caused a very slight breeze it the crocs mouth and caused the biting action. It appears to be more of a reaction for croc rather then the guy. Either way that was too close for comfort in my opinion.

My bet is a drop of water hit the croc`s tongue making it react with a chomp. That dude is both very lucky and very stupid.

Canadian Dude is right. The second that a croc feels anything touching its open mouth, it will slam its jaw shut. There is a video on here of a guy who isn`t so lucky, and the reason that he said (later, on the news of course) that it did it is because his hand was wet and it dripped.
