^Your finger sticks to the surface of the rim quite well, so when you add a bit of water to it and slide your finger across it, it sticks, unsticks, sticks, unsticks etc. This translates to a vibration which causes the glass to resonate at its fundamental frequency and the vibrations in the glass produce sound.

The different amounts of water shorten the wavelength of the vibrations, thereby increasing the frequency. That`s why more water = a higher pitch. :)

yea they gotta be crystal though otherwise you don`t get that sound, also this guy is amazingly talented just the manual dexterity alone that is required to do that as quickly as he does is amazing let alone the fact that he can make such amazing music with it.
